Monk fruit extracts are prepared by water extraction of the fruit of Siraitia grosvenorii. Cucurbitane glycosides are main components of S. grosvenorii fruit. The reaction may proceed more rapidly at high temperatures, thus decreasing the levels of glucose and fructose in HT samples.
